Decided to try something new tonight.
First, Max and I did a lil’ grocery shop (that’s nothing new). Real Men Carry Confetti Grocery Bags. And he does it so well
Love him.
And this past weekend, Amy and I stopped at Dan’s Farm which neither of us had been at since our little incident in August. Anyways, I bought beets and squash there and I finally made them!
Confession: when I made this I wasn’t even sure what kind of squash this was. I now have discovered, with the help of my trusty friend Google, that apparently this is a Kabocha Squash. Who knew?
I had to cut the fella. Let me re-phrase that. Max had to cut it.. I needed some man power.
And judging from Max’s expression, he was SUPER excited to do it. Clearly.
Then I chopped that all up and did the same to the beets. I get a kick out of cutting beets – it literally looks like there’s a crime scene on my cutting board every time. Downright scary!
So then I placed them all onto a baking sheet. Drizzled with olive oil because we don’t have grapeseed oil (Steph, I know what you are thinking), salt, pepper, a little bit of nutmeg, gave it all a love rub, and in the oven at 400 for about 25 minutes.
Voila.
Along with a chicken sausage from, The Village Butcher (local/favourite), and Max and I were happy campers.
Then, I decided to also roast the seeds! Which I have never done before, I know – WHO am I?
I had absolutely no idea what I was doing, I just kinda guessed as to what goes into roasting squash seeds. I put them in a bowl, added olive oil, salt, pepper, cinnamon, nutmeg, onion & garlic powder, and roasted them with the rest of the squash.
They are so good. SO GOOD. Thank goodness Max doesn’t like “seedy things” - so I get to eat them all

Max and I are off to this place in exactly 3 days. I am beyond excited…Any guesses where this might be?

I’ve wanted to try a Kobocha squash, but didn’t quite know what to do with it! I’m so glad you shared this. I think the seeds look fabulous too! I also love the crime scene cutting board….hilarious!
It’s actually really delicious! I think I forgot to mention that. My brother isn’t a fan of any squash and he liked this one so thats saying something!

That is MY kind of dinner!! Well…minus the sausage..in exchange for a Field Roast sausage bahaha. YUM! I love that squash, I’ve only had it once, but man was it tasty!! So jealous of your upcoming trip..YAY! Also.. cinnamon on seed?! GENIUS!
I was having second thoughts about the cinnamon when the seeds where in the oven to be honest!! hahaha but its worked out soooo well. DO IT next time!
I love making seeds! Such a waste to be tossed! When is comes to beats do you just cut them raw and roast or is there more too it? I have never purchased them (aside from cans) because I have no clue what to do with them. I could google but I’ll let you answer instead.
